A restaurant built on one dish
Doomo Saltado, led by Edinho Hayashida, takes lomo saltado, the beef-and-tomato stir-fry that Lima's chifas gave the rest of Peruvian cooking, and runs it through the rest of the menu. The beef is Certified Angus, and the wok is in an open kitchen. In 2024 it won best lomo saltado at the Premios Somos.
