Third generation, seven cousins
The Tong family has been cooking chifa for three generations. In 2016, seven cousins from the third one, among them Sanyin Wu Tong, Chacyin Wu Tong and Teresa Tello Tong, opened Gran Chifa Chung Tong on Av. Benavides in Santiago de Surco, a block from the Higuereta roundabout heading toward the Panamericana Sur. Chung, they say, means "the center of everything"; Tong is the family name.
It's a neighborhood chifa in a residential district, far from Barrio Chino and from the tourist circuit.
The soup first
The Sopa Chung Tong is the house signature: a broth simmered for six hours, with wonton, pork, chicken, shrimp and vegetables. After that:
- Chita al vapor, steamed fish with garlic, ginger, onion and Chinese mushrooms.
- Arroz chaufa, in eleven versions.
- Chi jau kay picante, a spicy take on the chifa classic, from chef Chacyin.
- Min pao, sweet or savory, and the Chinese empanadas filled with pork in an ají limo sauce.
- Ti pa kay, the sweet-and-sour chicken that balances a table.
Chifa portions are big. Two mains and the soup are plenty for three people.
